Dals used: Moong dhal, Chana dal, Urad dal



Ingredients

1 cup Moong dal 

1 cup Chana dal

1 cup Urad dal

1 spoon green Chilli, Ginger, Garlic paste 

1/4 spoon Turmeric

1/4 spoon Red Chilli powder

Coriander leaves

Salt


Method


1. Wash all the dals thoroughly and soak them for 5 hours before using them for the recipe. 

2. Grind all the soaked dal in a mixer jar. 

3. Add ginger, garlic, and green chilli paste to it. 

4. Add Turmeric, Red Chilli powder, Coriander leaves and Salt to taste.


Procedure

1. Steam the mixture in a steamer vessel. 

2. Once it becomes cool, cut it into square shapes or shape at your convenience.

3. Deep fry it in a pan.

4. Kalanachya Vadya is ready to serve with tomato sauce or any chutney.


Mixed Dal AAPE

Dhals used ; Chana dal, Moong dal, Toor dal, Massor dal



Ingredients

1/2 cup - Channa dal

1/2 cup - Moong dal

1 spoon - Toor dal

1 spoon - Masoor dal

1 spoon - Jeera

1/2 cup - Carrot

1/2 cup - Capsicum

3 to 4 Garlic cloves

4-5 green Chilies

chopped Coriander 

1 spoon - ENO 

Salt to taste 

1tsp Turmeric

1tsp Red Chili powder

1tbsp Vegetable oil


Method


1. Wash all the dals thoroughly and soak them for 5 hours before using them for the recipe. 

2. Grind all the soaked dal in a mixer jar. 

3. Add Jeera, Garlic, and green Chili to it and grind again. 

4. Add fined chopped Capsicum and Carrot to the mixture. 

5. Add turmeric, Salt, Red Chili powder. 

6. Mix everything together well. 

7. Add 1 spoon ENO into the mixture and keep it for rest for 10 mins.


Procedure to cook AAPE - 

1. Preheat the AAPE pan while brushing oil on it properly. 

2. Add a little mixture into the pan one by one. 

3. Cook it until it turns golden brown while flipping it upside down on both sides. 

4. The mixed dal AAPE is then ready to serve.




Vegetable Burger (Tikki made with dals)

A. Tikki  

Ingredients for Tikki

1 cup- Chana dal

1/4 cup - Urad dal

1/4 cup - Moong dal

1/4 cup - Masoor dal,  

1 cup- washed and chopped Spinach(Palak)  

1 cup - chopped and washed Coriander leaves  

1cup- Washed and chopped Fenugreek leaves   

1tsp Turmeric powder

 6 - green Chilies 

4 - garlic Cloves ,  

1 inch-  Ginger 

1tbsp Rice flour   1tbsp Semolina (Rava)  


Method for Tikki -   

1. Soak Moong, Masoor, Chana and Urad dal for 5 hours   

2. Add this mixed soaked dal ,green Chillies, Ginger,Salt, into mixer jar and  make a paste of it.  

3. In this dal paste add chopped Spinach,  green Coriander leaves  and Fenugreek leaves 

4. Add Turmeric powder and mix it well.  

5. Make a small patties from this dal paste and steam it for 20 minutes in a medium flame.  

6. Coat this tikki in the mixture of  Semolina and Rice flour and shallow fry it on a hot plate (tava.)   


B. Mushrooms 

Ingredients for Mushroom

200gms Mushrooms 1tbsp 

Oil 1tsp Salt 

1tsp black Pepper  


Method for Mushrooms 


1. Stir fry Mushroom in oil for 5 to 7 minutes 

2. Add Salt and Pepper  


C..Mayonnaise

Ingredients got Mayonnaise

 3/4 cup - Oil,  

1/4 cup - Milk,  

1tbsp - Lime juice,  

1/2 tsp - Salt,  

1/2 tsp - black Pepper powder, 

2 - Garlic cloves.  


Method for Mayonnaise 

1. Add all ingredients in mixture jar 

2. Mix it till thick paste   


D...Burgers   

Ingredients for Burgers

4 nos.- Burger bun,  

Few Lettuce leaves,  

2 – Tomatoes,   

4 nos. - Cheese cubes  

100 gm - Butter ,  

1tsp - Salt. 

Tikki from step A 

Mushrooms from step B 

Mayonnaise from step C    


Assembling vegetable Burger   

1. Roast Burger on hot plate, apply Butter  

2. Apply Mayonnaise (as prepared in step C) on one slice  

3. Top it with Lettuce leaves  sliced Onion,sliced Tomato. 

4. Add fried mushrooms (as prepared in step B) 

5. Place the Tikki on it (as prepared in step A)

6. Grate Cheese on the top of the Tikki 

7. Apply Tomato sauce on the other bun and place it on the Tikki.

Sweet Sour Panna With Moong Dal Chilla

 Ingredients  


1 cup split Moong dal ( yellow or with skin ) 

1” Ginger piece washed and cut  

6 green Chillies washed n crown removed  

Pinch of Heeng  

1/2 cup :tamarind and jaggery paste 

 1tsp Chaat Masala 

 Few (Pudina) Mint chopped  

 Coriander leaves chopped  

1/4 tsp roasted Cumin (Jeera} powder  

1/4 tsp Chilli powder  

Black salt  (Himalayan salt)  

Lime juice  



 Method  


1. Wash and soak Dal for 1.5 hrs  Drain and if using the green one. (remove the skin off by continuous washing and discarding the skin.). 

2. Grind the dal after draining the water with the Ginger , Chilies and Heeng into a slightly coarse paste , using little water at a time  Make sure it’s not very finely ground  Add more water and make it into a batter  The batter should be like a dosa/ chilla  

3. To this add the Salt , and mix it with the hand till nice n airy. 

4. On a hot pan make dosa/chilla out of this batter  cooking on both sides  

5. Cool it and cut it into small squares or strips   

6. Next make SWEET SOUR PAANA   

7. Dilute the Tamarind Jaggery paste with about 1/2 ltr chilled water  

8. Add the Chaat masala, Jeera powder , Chilli powder, Salt , Rock Salt , Pudina ( Mint ) Coriander leaves and Lime juice  

9. Mix it well  

10. Adjust the spices as per your taste  

11. Add the Moong daal chilla squares/ strips to this  

12. Keep it refrigerated   Enjoy it on a hot summer day !!
